Coleslaw
A vegan version of a classic side dish.
Ingredients
- 1 Small white cabbage, thinly sliced
- 5 Carrots, grated
- 1 Brown onion, thinly sliced
- 200g / 7 oz Vegan mayo
- 1 tsp Dijon mustard
Method
- Soak the sliced onions in water for a couple of minutes to take away some of the acid.
- Mix all of the idegredients together, then serve. It really is that simple.
Variations
- You can use red instead of white cabbage - of combine them both.
- Same with red onions.
- A small handfull of poppy seeds go well with the dish.
